There Is No Such Thing as Too Much Green on St. Patrick’s Day

Spiced Apples

Ingredients:

  • 4 granny smith apples, cored and roughly chopped
  • 1/4 cup pure maple syrup
  • 2 tablespoons coconut oil
  • 1/2 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon salt

Preparation:

  1. Preheat the oven to 350˚F.
  2. In a large, oven-safe skillet over medium heat on the stove, combine all of the ingredients and bring the liquid to a boil. Stir the apples until the liquid thickens and becomes a bit sticky, about 1-2 minutes.
  3. Transfer the skillet to the oven, and bake for 30 minutes, stirring halfway through the baking time. The apples are ready when they are fork-tender and caramelized.
  4. Serve warm as is, or with your favorite topping.
