Today, May 1st, is national chocolate parfait day! It could not have come at a better time…the end of finals week! Hello. Sweet Reward!
Chocolate Parfait
Ingredients:
- 1/4 cup unsweetened coconut flakes
- 1/4 teaspoon coconut oil
- 1/8 teaspoon honey
Chocolate Yogurt
- 8 oz. non-fat vanilla Greek yogurt
- 3 Tablespoons cocoa powder, sifted
- 1 1/2 Tablespoons honey
Topping Options:
- Fresh berries, washed & cut
- Banana, sliced
- Toasted Nuts
Preparation:
- Warm coconut oil in a skillet over medium heat. Add coconut flakes & honey, stirring together. Cook for a few minutes, stirring occasionally & more often as the coconut begins to brown, until golden & toasted as desired, being careful not to burn. Remove from heat.
- In a bowl, whisk together the yogurt, cocoa powder, & honey until smooth.
- Layer the yogurt with the toasted coconut & garnish with your choice of topping.
