There is No Better Way to Celebrate the Last Day of Finals Than with a Sweet Treat

Today, May 1st, is national chocolate parfait day! It could not have come at a better time…the end of finals week! Hello. Sweet Reward!

Chocolate Parfait

Ingredients:

Toasted Coconut:Chocolate Parfait

  • 1/4 cup unsweetened coconut flakes
  • 1/4 teaspoon coconut oil
  • 1/8 teaspoon honey

Chocolate Yogurt

  • 8 oz. non-fat vanilla Greek yogurt
  • 3 Tablespoons cocoa powder, sifted
  • 1 1/2 Tablespoons honey

Topping Options:

  • Fresh berries, washed & cut
  • Banana, sliced
  • Toasted Nuts

Preparation:

  1. Warm coconut oil in a skillet over medium heat. Add coconut flakes & honey, stirring together. Cook for a few minutes, stirring occasionally & more often as the coconut begins to brown, until golden & toasted as desired, being careful not to burn. Remove from heat.
  2. In a bowl, whisk together the yogurt, cocoa powder, & honey until smooth.
  3. Layer the yogurt with the toasted coconut & garnish with your choice of topping.
