Baked Falafel with Tzatziki Sauce
Falafel:
- 3 Tablespoons olive oil
- 1 cup of dry chickpeas, soaked
- 1 medium onion, peeled and cut into chunks
- 4-5 cloves of garlic, peeled
- ½ cup fresh parsley, washed and chopped
- 1/2 cup fresh cilantro, washed and chopped
- zest and juice of ½ lemon
- 1 tsp cumin
- 1 tsp coriander
- salt & pepper, to taste
- whole-wheat pita
Tzatziki Sauce:
- cups Greek yogurt
- 3 tablespoons lemon juice
- 1 garlic clove, minced
- 1 large English cucumber, diced
- 1 tablespoon salt
- 1 tablespoon fresh dill
- salt & freshly ground black pepper
Preparation:
Falafel:
- Preheat oven to 400 F.
- Combine all ingredients in a food processor and puree until smooth, about a minute.
- Line a sheet tray with foil & spray with olive oil spray.
- Take an ounce of the mixture, forming into round falafel. Repeat this until all the mixture is gone.
- Place each one on the sheet tray, about an half inch apart.
- Bake for 15 minutes & flip. Then, bake for another 15 minutes.
- Serve with warm whole-wheat pita.
Tzatziki Sauce:
- In a medium bowl, add all the ingredients & mix.
Greek Salad
Ingredients:
- romaine lettuce, chopped
- 1/2 red onion, sliced
- 1 tomato, seeded and diced
- kalamata olives, pitted and sliced
- 1/2 cup feta cheese
- olive oil & balsamic vinegar
Preparation:
- Place romaine in a serving dish & top with remaining ingredients, tossing to mix.
- Drizzle with olive oil & balsamic vinegar.
