Baked Falafel with Tzatziki Sauce

Ingredients:Falafel with Tzatziki Sauce

Falafel:

  • 3 Tablespoons olive oil
  • 1 cup of dry chickpeas, soaked
  • 1 medium onion, peeled and cut into chunks
  • 4-5 cloves of garlic, peeled
  • ½ cup fresh parsley, washed and chopped
  • 1/2 cup fresh cilantro, washed and chopped
  • zest and juice of ½ lemon
  • 1 tsp cumin
  • 1 tsp coriander
  • salt & pepper, to taste
  • whole-wheat pita

Tzatziki Sauce:

  • cups Greek yogurt
  • 3 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1 large English cucumber, diced
  • 1 tablespoon salt
  • 1 tablespoon fresh dill
  • salt & freshly ground black pepper

Preparation:

Falafel:

  1. Preheat oven to 400 F.
  2. Combine all ingredients in a food processor and puree until smooth, about a minute.
  3. Line a sheet tray with foil & spray with olive oil spray.
  4. Take an ounce of the mixture, forming into round falafel. Repeat this until all the mixture is gone.
  5. Place each one on the sheet tray, about an half inch apart.
  6. Bake for 15 minutes & flip. Then, bake for another 15 minutes.
  7. Serve with warm whole-wheat pita.

Tzatziki Sauce:

  1. In a medium bowl, add all the ingredients &  mix.

Greek Salad

Ingredients:

  • romaine lettuce, chopped
  • 1/2 red onion, sliced
  • 1 tomato, seeded and diced
  • kalamata olives, pitted and sliced
  • 1/2 cup feta cheese
  • olive oil & balsamic vinegar

Preparation:

  1. Place romaine in a serving dish & top with remaining ingredients, tossing to mix.
  2. Drizzle with olive oil & balsamic vinegar.
